Flourless Collagen Brownies

Craving something sweet mid-week?

These Flourless Collagen Brownies are the perfect little treat when that chocolate craving hits. They’re rich, fudgy, and made with a few simple ingredients—including a sneaky source of plant-based protein: black beans! And yes… you read that right. Black beans in brownies!


I promise you won’t taste them, but they help create a deliciously fudgy texture while adding some extra fibre and nutrients. I’ve also added collagen powder for an easy boost of protein. Whether you’re looking for a healthier dessert option or simply want to try something a little different, these brownies are definitely worth making!



Flourless Collagen Brownies

Ingredients

  • 1½ cups black beans, drained and rinsed

  • ½ cup cocoa powder

  • ½ tsp baking soda

  • ¼ cup coconut oil, plus extra for greasing

  • ½ cup maple syrup

  • 1 tsp vanilla extract

  • 2 eggs

  • Dash of salt

  • ¼ cup dark chocolate chips (optional)

  • ¼ cup walnuts (optional)

  • 2 scoops collagen powder or 1 scoop of protein powder (I like to use Pure Paleo Protein Powder from Designs for Health if using a protein powder)


Instructions

1. Prep your oven and pan

Preheat your oven to 350°F and grease a 9×9-inch baking dish with a little coconut or olive oil.


2. Blend the batter

Add the black beans, coconut oil, maple syrup, vanilla extract, eggs, cocoa powder, baking soda, collagen powder, and salt to a food processor or high-powered blender.

Blend until completely smooth and creamy.


3. Add your extras

Transfer the brownie batter to a bowl and gently fold in the dark chocolate chips and walnuts, if using. I topped mine with almond slices.


4. Bake

Pour the batter into your prepared baking dish and spread evenly. Bake for approximately 18–22 minutes, or until a fork inserted into the centre comes out clean.


5. Cool & enjoy

Allow the brownies to cool for at least 10 minutes before slicing. They’ll continue to set as they cool. For an extra special treat, top with coconut whipped cream and enjoy! 🤎

I love recipes like this because they show that enjoying dessert doesn’t have to mean reaching for highly processed ingredients. With simple swaps and a few wholesome ingredients, you can still enjoy something delicious while being mindful of what you’re putting into your body.
